Cakes are made using high quality Butter, Free-Range Organic Eggs, Organic Flours, Colouring comes from a natural source when possible, eg. raspberry, strawberry, mangos (alphonso), sweetened with Locally Sourced Honey or Cane Sugar. Chocolate is either Valrhona or Callebaut. Gluten Free “Flours” are also organic. I have created vegan products based on the opinions of vegans that I know. I concentrate on the taste of the cakes more than very fancy decorating, and I tend to use more of a rustic approach, and then decorate with fresh flowers, or fruit.
